Log on to the Internet, search for Mexican restaurants and I’ll guarantee there are plentiful options … in any American city. Some will argue many of the country’s favorite dishes—such as fajitas, margaritas, chimichangas—aren’t “authentic” Mexican food at all. Mitch has more than 30 years of experience in management, manufacturing and sales in the food-service industry. He’s played key roles in well-known brands such as PepperJax and Sysco. Plus, he’s heavily involved in the Nebraska Restaurant Association, currently serving as the board’s secretary/treasurer. He’s the go-to guy for operating questions, compliments and complaints.
Mitch and wife Carole have been married 23 years and work daily at both Fernando’s locations. They spend their spare time hanging with grandkids Kenley and Noah, grilling on the patio and hitting the links for a quick round.
